How To Make Texas Skirt Steak Fajitas

Texas Skirt Steak Fajitas recipe. This authentic recipe for steak fajitas will bring a little "Tex-Mex" to your dining table and much of the fun is in adding the toppings!

Step 1:
You will need:

* 500 g skirt steak
* 1 green pepper , sliced
* 1 red pepper , sliced
* 1 onion , sliced
* 6 Tbsp olive oil
* some salt
* for the marinade:
* 45 ml red wine vinegar
* the juice from 2 limes
* 2 Tbsp olive oil
* 1 Tbsp brown sugar
* 2 Tbsp coriander , chopped
* 2 cloves garlic , minced
* 1 tsp oregano
* ½ tsp cumin powder
* ½ tsp black pepper , crushed
* for the garnish:
* some lettuce , shredded
* some guacamole sauce
* some salsa sauce
* some sour cream
* some grated cheese
* a few tortillas
* 1 cutting board
* 1 knife
* 1 set of tongs
* 1 grill pan
* 2 trays
* 1 frying pan
* 1 bowl
* 1 spoon
* cling film
* 1 large fork

Step 2:
Make the marinade
Pour the red wine into the bowl. Then add the lime juice, two tablespoons of olive oil, sugar, chopped coriander, garlic, oregano, cumin and black pepper and mix it all together well.
Step 3:
Marinate the meat
Put the meat into the marinade making sure that it is well covered by pushing it down into the liquid. Cover the bowl well with cling film and marinate for at least an hour.
Step 4:
Sear the vegetables
Heat the frying pan on a high heat, add a little olive oil and allow it to heat up. Once heated, add the green peppers and quickly fry for 1 to 2 minutes. Then remove and place them onto a tray. Now add the red peppers and sear them, for no more than 1 to 2 minutes. Remove them and place them with the green peppers. Add a little more oil to the pan followed by the onions. Sear them for roughly 2 to 3 minutes. Now set them aside together with the peppers.
Step 5:
Prepare the steak
After one hour remove the steak from the marinade. Shake off the excess liquid and place it on a tray. Now season it on both sides with salt.
Step 6:
Grill the steak
Heat the grill pan on a medium to high heat. When hot, add the meat and grill it for 3 minutes on each side. However, be careful not to burn the steak. Lower the temperature if need be. When grilled, remove and place onto a tray.
Step 7:
Slice the steak
Place the grilled steak onto the cutting board. Thinly slice the meat, making sure that you cut across the grain.
Step 8:
Serve
Transfer the meat onto a serving plate and build the seared vegetables around it. Take a tortilla and add a generous helping of the meat into the centre. Add a helping of fried onion, green pepper, red pepper, lettuce, grated cheese, crème fraiche, tomato salsa and guacamole. However, you can have great fun making one any way you desire! And if you want hot tortillas just heat them for 20 seconds in the microwave or for a few minutes, in the oven wrapped in foil.
