How To Make BBQ Chicken With The Microwave Gourmet
Barbara Kafka, aka The Microwave Gourmet, is a rare breed: an award-winning chef who embraces the lowly microwave. This BBQ chicken makes a great appetizer or light meal and there's no barbecue required.
You Will Need
* 1 cups (250ml) ketchup
* 1⁄3 cups dark brown sugar (packed)
* 4 medium cloves garlic , minced
* 2 Tbsp cider vinegar
* ½ tsp kosher salt
* ground black pepper to taste
* ½ tsp hot red pepper sauce
* 8 medium chicken drumsticks
Step 1:
Mix The Sauce
Put the ketchup in a microwaveable bowl or measuring cup. Stir in the sugar, minced garlic, vinegar, salt, pepper, and red pepper sauce, and blend.
Step 2:
Sauce The Chicken
Arrange 4 chicken legs at a time in a circular dish with the thick parts toward the outside of the dish. Trim the ends of the drumsticks to the bone for best results. Pour sauce over chicken, and coat each piece thoroughly.
Step 3:
Cover And Cook
Cover dish tightly with plastic wrap and put in microwave. Cook four drumsticks at a time, seven and a half minutes for each dish of drumsticks. Remove chicken after cooking and spoon sauce to completely cover each leg. Serve hot.
